Wine is an alcoholic beverage made from fermentation of grape juice. The natural chemical balance of grapes is such that they can ferment without the addition of sugars, acids, enzymes, or other nutrients. Although fruits other than grapes can also be fermented, the resultant wines are normally named after the fruit from which they are produced (for example, apple wine) and are known as fruit wine (or country wine). Others, such as barley wine and rice wine (e.g. sake), are made from starch-based materials and resemble beer more than wine; ginger wine is fortified with brandy. In these cases, the use of the term "wine" is a reference to the higher alcohol content, rather than the production process. The commercial use of the word "wine" (and its equivalent in other languages) is protected by law in many jurisdictions. Wine is produced by fermenting crushed grapes using various types of yeast which consume the sugars found in the grapes and convert them into alcohol. Various varieties of grapes and strains of yeasts are used depending on the types of wine produced.
Wine stems from an extended and rich history dating back about 8,000 years and is thought to have originated in present-day Georgia or Iran. Wine is thought to have appeared in Europe about 6,500 years ago in present-day Bulgaria and Greece and was very common in ancient Greece and Rome; the Greek god Dionysos, and his Roman counterpart Liber represented wine. Charles Camille Heidsieck (1822–1893) was a French Champagne merchant who founded the Champagne firm Charles Heidsieck in 1851. He is credited with popularizing Champagne in the United States and was known as "Champagne Charlie" during his stay.

Skin-contact wine before clarification and stabilization
Orange wine, also known as skin-contact white wine, skin-fermented white wine, or amber wine, is a type of wine made from white wine grapes where the grape skins are not removed, as in typical white wine production, and stay in contact with the juice for days or even months. This contrasts with conventional white wine production, which involves crushing the grapes and quickly moving the juice off the skins into the fermentation vessel. The skins contain color pigment, phenols and tannins that would normally be considered undesirable for white wines, while for red wines skin contact and maceration is a vital part of the winemaking process that gives red wine its color, flavor, and texture.
International Organization for Vine and Wine (OIV) describes orange/amber wine as "White wine with maceration" and prescribes the minimum duration of the maceration phase to be 1 month. (Full article...) -
Pinotage /ˈpɪnətɑːʒ/ PIN-ə-tahzh is a red wine grape that is South Africa's signature variety. It was cultivated there in 1925 as a cross between Pinot noir and Cinsaut (Cinsaut was known as "Hermitage" in South Africa at that time, hence the name). It typically produces deep red varietal wines with smoky, bramble and earthy flavours, sometimes with notes of bananas and tropical fruit, but has been criticised for sometimes smelling of acetone. The influence of wine in ancient Greece helped ancient Greece trade with neighboring countries and regions. Many mannerisms and cultural aspects were associated with wine. It led to great change in Ancient Greece as well.
The ancient Greeks pioneered new methods of viticulture and wine production that they shared with early winemaking communities in what are now France, Italy, Austria and Russia, as well as others, through trade and colonization. Chianti is an Italian red wine produced in the Chianti region of central Tuscany, principally from the Sangiovese grape. It was historically associated with a squat bottle enclosed in a straw basket, called a fiasco ("flask"; pl.: fiaschi). However, the fiasco is now only used by a few makers of the wine; most Chianti is bottled in more standard-shaped wine bottles. In the latter nineteenth century, Baron Bettino Ricasoli (later Prime Minister of the Kingdom of Italy) helped establish Sangiovese as the blend's dominant grape variety, creating the blueprint for today's Chianti wines.
The first definition of a wine area called Chianti was made in 1716. It described the area near the villages of Gaiole, Castellina and Radda; the so-called Lega del Chianti and later Provincia del Chianti (Chianti province). In 1932 the Chianti area was completely redrawn and divided into seven sub-areas: Classico, Colli Aretini, Colli Fiorentini, Colline Pisane, Colli Senesi, Montalbano and Rùfina. Most of the villages that in 1932 were added to the newly defined Chianti Classico region added in Chianti to their names, for example Greve in Chianti, which amended its name in 1972. Wines labelled Chianti Classico come from the largest sub-area of Chianti, which includes the original Chianti heartland. Only Chianti from this sub-zone may display the black rooster (gallo nero) seal on the neck of the bottle, which indicates that the producer of the wine is a member of the Chianti Classico Consortium, the local association of producers. Other variants, with the exception of Rufina north-east of Florence and Montalbano south of Pistoia, originate in the named provinces: Siena for the Colli Senesi, Florence for the Colli Fiorentini, Arezzo for the Colli Aretini and Pisa for the Colline Pisane. Warren Winiarski (born 1928) is a Napa Valley winemaker and the founder and former proprietor of Stag's Leap Wine Cellars.
Winiarski owns and operates Arcadia Vineyards in the Coombsville AVA of Napa Valley, which produces Chardonnay, Cabernet Sauvignon and Merlot. In 1976, Winiarski won the Judgment of Paris blind tasting for his 1973 Stag's Leap Wine Cellars Cabernet Sauvignon. He oversees the Winiarski Family Foundation, which supports educational and charitable causes, in addition to teaching courses at the St. John's College Summer Classics program in Santa Fe, New Mexico. In 2017, Winiarski was inducted into the 11th class of the California Hall of Fame by Governor Edmund G. Brown Jr. for his global efforts to showcase and preserve the quality and history of California wine. Beaujolais (/ˌboʊʒəˈleɪ/ BOH-zhə-LAY, French: [boʒɔlɛ]) is a French Appellation d'Origine Contrôlée (AOC) wine generally made of the Gamay grape, which has a thin skin and is low in tannins. Like most AOC wines they are not labeled varietally. Whites from the region, which make up only 1% of its production, are made mostly with Chardonnay grapes though Aligoté is also permitted until 2024 (on condition the vines were planted before 2004). Beaujolais tends to be a very light-bodied red wine, with relatively high amounts of acidity. In some vintages, Beaujolais produces more wine than the Burgundy wine regions of Chablis, Côte d'Or, Côte Chalonnaise and Mâconnais put together.
The wine takes its name from the historical Province of Beaujolais, a wine-producing region. It is located north of Lyon, and covers parts of the north of the department of Rhône, the Rhône-Alpes region and southern areas of the department of Saône-et-Loire, in Burgundy. While administratively considered part of the Burgundy wine region, the climate is closer to that of the Rhône, and the wine is sufficiently individual in character to be considered apart from Burgundy and Rhône. Through their extensive maritime trade network, the Phoenicians played a significant role in spreading viticulture and winemaking throughout the Mediterranean basin.
The culture of the ancient Phoenicians was one of the first to have had a significant effect on the history of wine. Phoenicia was a civilization centered in current day Lebanon. Between 1550 BC and 300 BC, the Phoenicians developed a maritime trading culture that expanded their influence from the Levant to North Africa, the Greek Isles, Sicily, and the Iberian Peninsula. Through contact and trade, they spread not only their alphabet but also their knowledge of viticulture and winemaking, including the propagation of several ancestral varieties of the Vitis vinifera species of wine grapes.
They either introduced or encouraged the dissemination of wine knowledge to several regions that today continue to produce wine suitable for international consumption. These include modern-day Lebanon, Syria, Algeria, Tunisia, Egypt, Greece, Italy, Spain, France, and Portugal. (Full article...) -
White wine is a wine that is fermented without skin contact. The colour can be straw-yellow, yellow-green, or yellow-gold. It is produced by the alcoholic fermentation of the non-coloured pulp of grapes, which may have a skin of any colour. White wine has existed for at least 4,000 years.
The wide variety of white wines comes from the large number of varieties, methods of winemaking, and ratios of residual sugar. White wine is mainly from "white" grapes, which are green or yellow in colour, such as the Chardonnay, Sauvignon blanc and Riesling. Some white wine is also made from grapes with coloured skin, provided that the obtained wort is not stained. Pinot noir, for example, is commonly used to produce champagne. (Full article...) -
Tuscan Chianti in a traditional fiasco
Italian wine is produced in every region of Italy. Italy is the world's largest wine producer, as well as the country with the widest variety of indigenous grapevine in the world, with an area of 702,000 hectares (1,730,000 acres) under vineyard cultivation, and contributing a 2013–2017 annual average of 48.3 million hl of wine. In 2018 Italy accounted for 19 per cent of global production, ahead of France (17 per cent) and Spain (15 per cent). Italian wine is both exported around the world and popular domestically among Italians, who consume an average of 42 litres per capita, ranking fifth in world wine consumption.
The origins of vine-growing and winemaking in Italy has been illuminated by recent research, stretching back even before the Phoenician, Etruscans and Greek settlers, who produced wine in Italy before the Romans planted their own vineyards. Nebbiolo (/ˌnɛbiˈoʊloʊ/, Italian: [nebˈbjɔːlo]; Piedmontese: nebieul [neˈbjøl]) is an Italian red wine grape variety predominantly associated with its native Piedmont region, where it makes the Denominazione di Origine Controllata e Garantita (DOCG) wines of Barolo, Barbaresco, Gattinara, Ghemme, and Roero, together with numerous DOC wines. Nebbiolo is thought to derive its name from the Italian nebbia or Piedmontese nebia, meaning "fog". During harvest, which generally takes place late in October, a deep, intense fog sets into the Langhe region where many Nebbiolo vineyards are located. Alternative explanations refer to the fog-like glaucous veil that forms over the berries as they reach maturity, or that perhaps the name is derived instead from the Italian word nobile, meaning noble. Nebbiolo produces lightly-colored red wines which can be highly tannic in youth with scents of tar and roses. As they age, the wines take on a characteristic brick-orange hue at the rim of the glass and mature to reveal other aromas and flavours such as violets, tar, wild herbs, cherries, raspberries, truffles, tobacco, and prunes. Savanna Samson (born October 14, 1967) is the stage name of Natalie Oliveros, an American former pornographic actress. The winner of several AVN Awards, she has spent most of her career as a contract performer with major producer Vivid Entertainment, and is known for her roles in acclaimed adult films such as The New Devil in Miss Jones. In addition to performing, she has her own adult film studio, Savanna Samson Productions. A native of upstate New York, she entered the adult film industry in 2000, after working as a dancer at the Manhattan strip club, Scores.
Samson has gained mainstream recognition with appearances on television shows such as Saturday Night Live, The Daily Show and 30 Rock. Her wide range of activities outside pornography include working as a sex-advice columnist, a radio presenter and a political correspondent. The Great French Wine Blight was a severe blight of the mid-19th century that destroyed many of the vineyards in France and laid waste to the wine industry. It was caused by an aphid that originated in North America and was carried across the Atlantic in the late 1850s. The actual genus of the aphid is still debated, although it is largely considered to have been a species of Daktulosphaira vitifoliae, commonly known as grape phylloxera. While France is considered to have been worst affected, the blight also did a great deal of damage to vineyards in other European countries.
How the Phylloxera aphid was introduced to Europe remains debated: American vines had been taken to Europe many times before, for reasons including experimentation and trials in grafting, without consideration of the possibility of the introduction of pestilence. While the Phylloxera was thought to have arrived around 1858, it was first recorded in France in 1863, in the former province of Languedoc. It is argued by some that the introduction of such pests as phylloxera was only a problem after the invention of steamships, which allowed a faster journey across the ocean, and consequently allowed pests such as the Phylloxera to survive the trip. Roussanne is a white wine grape grown originally in the Rhône wine region in France, where it is often blended with Marsanne. It is the only other white variety, besides Marsanne, allowed in the northern Rhône appellations of Crozes-Hermitage AOC, Hermitage AOC and Saint-Joseph AOC. In the southern Rhône appellation of Châteauneuf-du-Pape AOC it is one of six white grapes allowed, where it may be blended into red wines. Roussanne is also planted in various wine-growing regions of the New World, such as California, Washington, Texas, South Africa and Australia as well as European regions such as Crete, Tuscany and Spain.
The berries are distinguished by their russet color when ripe—roux is French for the reddish-brown color russet, and is probably the root for the variety's name. The aroma of Roussanne is often reminiscent of a flowery herbal tea. In warm climates, it produces wines of richness, with flavors of honey and pear, and full body. In cooler climates it is more floral and more delicate, with higher acidity. In many regions, it is a difficult variety to grow, with vulnerability to mildew, poor resistance to drought and wind, late and/or uneven ripening, and irregular yields. (Full article...) -

Ancient Rome played a pivotal role in the history of wine. The earliest influences on the viticulture of the Italian peninsula can be traced to ancient Greeks and the Etruscans. The rise of the Roman Empire saw both technological advances in and burgeoning awareness of winemaking, which spread to all parts of the empire. Rome's influence has had a profound effect on the histories of today's major winemaking regions in France, Germany, Italy, Portugal and Spain.
The Roman belief that wine was a daily necessity made the drink "democratic" and ubiquitous; in various qualities, it was available to slaves, peasants and aristocrats, men and women alike. To ensure the steady supply of wine to Roman soldiers and colonists, viticulture and wine production spread to every part of the empire. The economic opportunities presented by trading in wine drew merchants to do business with tribes native to Gaul and Germania, bringing Roman influences to these regions even before the arrival of the Roman military. Evidence of this trade and the far-reaching ancient wine economy is most often found through amphorae – ceramic jars used to store and transport wine and other commodities. (Full article...)

Dominus Estate, formerly Napanook Vineyards, is a California wine estate producing Bordeaux style blends, owned by Christian Moueix. The winery is located in Yountville within the Napa Valley AVA. George C. Yount, the founder of Yountville, planted in 1836 the first vines of the valley on the location of Napanook vineyard. In 1850 the property was bought by Charles Hopper, and owners since include Hugh La Rue, a pioneer in the use of rootstock and John Daniel Jr., the owner of Inglenook Winery who bought the estate in 1946.
Following Daniel's death in 1970, Napanook passed to his daughters Robin Lail and Marcia Smith who in 1982 began a partnership with Christian Moueix, acting on a recommendation by Robert Mondavi to establish production in Napa Valley. Moueix, also in charge of production at Château Pétrus and president of Établissements Jean-Pierre Moueix, became the sole owner of Dominus Estate when Lail and Smith sold their shares in 1995.
